Sweet Chili Roasted Pistachios
Something about rainy Spring days gets me nostalgic about childhood tea time. Five o'clock would hit and my mom would have an array of sweet and spicy snacks along with delicious hot tea. Spicy nuts, sweet fried bread chips, fruit, biscuits...you name it she had it! One of my favorites were always spicy peanuts or pistachio. With Ramadan coming up and it being rainy May days, I thought I'd whip up some of my moms Sweet Chili Roasted Pistachios. Great as a snack with tea or even to give out to friends during Ramadan!
Ingredients:
2 cups Pistachios
½ Fresh Lime (juiced)
1 tbsp Olive Oil or Coconut Oil
1 tbsp Red Chili Powder
1/2 tbsp Onion Powder
1 tsp Salt (or to taste)
Method:
•Preheat oven to 275°F.
•Whisk together all the ingredients EXCEPT the pistachios.
•Stir in pistachios to coat evenly.
•Spread the pistachios (in shell) over a baking tray.
•Roast on the middle rack for about 30 minutes or until the spice mixture has dried on the nuts and nut shells.
•Once roasted, remove from oven and let cool.
**Nuts will become more crispy as they cool!
