White Cheddar Mac & Cheese

One staple in my house is Mac & Cheese. Any kind, yellow cheddar, avocado cheddar, buffalo cheddar...you name it, I make it. My kids are literally obsessed! One of their favorites is White Cheddar. It's made with things I always have on hand in my pantry/fridge, and something quick I can whip up. Especially when all else fails, I know they will eat good ol' mac & cheese. Here's my take on my kids favorite White Cheddar Mac & Cheese.

Ingredients: 2 tbsp Butter 2 tbsp All Purpose Flour 1 Garlic Clove (minced) 5 oz can of Evaporated Milk (or 1/2 of a 12 oz can) 2 heaping tbsp of Sour Cream Salt/Pepper (to taste) Paprika (optional) 6 oz of Sharp White Cheddar Cheese (or cheese of choice....be sure to shred it) 1 cup Dry Elbow Macaroni (Boiled/drained according to package)

Method: -Melt butter in a saucepan and saute minced garlic until fragrant.

-Add your flour and mix well into the butter to make a roux (thickening agent). -Once your flour, garlic and butter look like a thick paste, using a whisk, drizzle in your evaporated milk. -Whisk well until you see no lumps, then mix in the sour cream. -Stir constantly until you see the white sauce start to thicken. -Now season with your spices, then toss in your shredded cheddar cheese. -Mix well until all the cheese has melted in. -Now remove from heat and toss in your boiled/drained macaroni. -Serve garnishing with freshly chopped parsley, and freshly cracked pepper if desired.

My kids like it along side some rice crackers and freshly grated Parmesan Cheese on top. Which ever way it may be...they are sure to gobble it up! :)
