Tahiri: Potato & Pea Rice

Tahiri is an aromatic spiced, one pot rice pilaf. Traditionally made vegetarian and known for its beautiful golden hue. A simple humble dish but packed with flavor and one all ages enjoy. 

The twist? Instead of making it with just the water (the traditional cooking liquid used) I’m going to flavor this dish up using Ziyad Brands Liyye Seasoning. 

Growing up this was a dish my mom would whip up after school or on the days my dad was working late or on call. As a mom now myself, I understand why this was one of those staple quick meals for us kids. Because there no need to defrost meat but fills little bellies with comfort.  

Ziyad Liyye Seasoning has definitely made it easy to get that delicious lamb meat flavor without having to actually cook with meat! 

Let’s get right to this home favorite! 

Ingredients: 

  • 1 cup basmati rice

  • 2 tbsp olive oil

  • 1/2 onion (sliced)

  • 2 garlic cloves (crushed)

  • 3 medium yellow potatoes (peeled & cubed)

  • 2 tbsp tomato paste

  • 1 pack Ziyad Liyye Seasoning

  • 4 black peppercorns

  • 3 cloves

  • 1 tsp cumin seeds

  • 1/4 stick of cinnamon

  • 1 sm black cardamom

  • 1/2 tsp Red Chili Powder

  • 1/2 tsp turmeric

  • 1/2 tsp salt

  • 2 cups water

  • 1/4 cup frozen peas 

Method: 

  1. Soak basmati rice in water and set aside.

  2. Heat oil in a saucepan and sauté onions and garlic until softened and caramelized.

  3. Now add your peeled and cubed potatoes (I cut each potato into 4 pieces).

  4. Sauté the potatoes for two to three minutes then add the tomato paste.

  5. Give it a good mix then add the Ziyad Liyye Seasoning packet along with all the spices.

  6. Mix and incorporate all the spices really well, into the potatoes.

  7. Then add 1/2 cup of water.

  8. Mix and cover allowing the potatoes to tenderize on medium to low heat for about 10 mins.

  9. After 10 minutes, check the potatoes to see if they are almost cooked. You want a bite to the potatoes because they will cook further with the rice.

  10. Now check your stock for seasoning, adjust your salt if needed. Remember potatoes soak up salt so you want to make sure there is enough salt to season the rice.

  11. Drain your rice that was soaking, rinse it and drain again and add it to the pot, along with your frozen peas.

  12. Mix then add 1.5 cups more water. Remember the Ziyad Liyye Seasoning will flavor the water and turn it similar to stock.

  13. Turn the heat to medium/high and bring the entire mixture to a rapid boil then reduce heat to low, cover and allow the rice to cook like normal for 10 to 12 mins or until rice is cooked.

  14. Fluff with a fork and enjoy!
